Ingredients

- 1 lb. bowtie pasta
- 1 tsp Kosher salt
- 1 tsp coarse ground black pepper
- 1 lb. 80/20 ground beef
- Taco seasoning mix
- 1 can of corn
- 15 oz black beans, drained
- 2 cups halved or quartered cherry tomatoes
- 2 cups freshly shredded cheddar cheese
- 4 green onions, thinly sliced
- ¼ cup finely chopped cilantro
Chipotle Lime Ranch
- 3/4 cup mayo
- 1/2 cup sour cream
- 1/2 cup chicken broth
- 1 tsp apple cider vinegar
- 3 chipotle peppers in adobo sauce
- 1 tsp dill
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- Juice from 1 lime
Instructions
- Boil water and cook pasta per instructions on box
- Brown the ground beef, drain excess fat then season with the taco seasoning.
- Cook corn over high heat on a griddle until charred then remove.
- Make the chipotle lime ranch by combining all of the ingredients in a food processor then blend.
- Combine the pasta, beef, corn, black beans, tomatoes, cheese, cilantro and green onions in a large bowl. Pour dressing over the top of the ingredients then mix thoroughly so it’s lightly coated.
- Refrigerate for 1 hour then serve.
